Ingredients

1 can (13.5 oz) coconut milk

1 can (14 oz) condensed milk

1 can (15 oz) cream-style corn

1 cup cornstarch

1 cup sugar

2 cups water

1 teaspoon vanilla extract

1/4 cup sweet corn kernels (optional)

Toasted grated coconut, for garnish (optional)

Preparation

Grease a 9x13 inch baking dish with cooking spray or butter.


In a large mixing bowl, whisk together the coconut milk, condensed milk, and cream-style corn.


In a separate bowl, dissolve the cornstarch in 1 cup of water.


In a large saucepan, combine the sugar and remaining 1 cup of water. Heat the mixture over medium-high heat, stirring occasionally, until the sugar has completely dissolved.


Add the coconut milk mixture to the saucepan and stir to combine.


Gradually add the cornstarch mixture to the saucepan while continuously stirring.


Cook the mixture over medium heat for about 20-30 minutes, or until it thickens to a pudding-like consistency.


Add the vanilla extract and sweet corn kernels (if using) and stir to combine.


Pour the mixture into the prepared baking dish and smooth out the top using a spatula.


Let the maja blanca cool at room temperature for about 1-2 hours, then refrigerate for an additional 1-2 hours until firm.


Once firm, cut the maja blanca into squares and garnish with toasted grated coconut (if using).Serve and enjoy!
