Ingredients
2 lbs oxtail, cut into pieces
1 onion, chopped
3 cloves garlic, minced
2 tbsp vegetable oil

1 cup crushed peanuts
1 eggplant, sliced
1 bundle bok choy or pechay

Once the oxtail is tender, remove it from the pot and set aside.
In a separate pan, toast the crushed peanuts over medium heat until they are golden brown. Set aside.
Add the peanut butter to the pot and stir until it is fully incorporated.
Add the toasted crushed peanuts to the pot and stir well.
Add the eggplant, bok choy, and string beans to the pot and cook until the vegetables are tender.
Add the oxtail back to the pot and stir to combine.
