Ingredients
2 cups of mixed vegetables (such as squash, green beans, eggplant, and spinach)
1 can of coconut milk
1 onion, chopped
2 cloves of garlic, minced
1 tablespoon of ginger, grated
2 tablespoons of vegetable oil
1 tablespoon of fish sauce
Salt and pepper to taste
Preparation
Heat the vegetable oil in a pan over medium heat. Add the onion, garlic, and ginger, and sauté until fragrant.
Add the mixed vegetables and sauté for 5 minutes.
Pour in the coconut milk and bring to a boil. Reduce heat to low and let simmer for 10 - 15 minutes or until the vegetables are cooked.
Season with fish sauce, salt, and pepper to taste.
Serve hot with steamed rice.
