Ingredients

1 pound firm white fish (such as cod, tilapia, or halibut), cut into 1-inch pieces

1 onion, chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

2 tablespoons vegetable oil

1 tablespoon curry powder

1 teaspoon ground cumin

1/2 teaspoon ground coriander

1/4 teaspoon cayenne pepper

1 (14-ounce) can coconut milk

1 (14-ounce) can diced tomatoes

1 tablespoon fish sauce

1 tablespoon brown sugar

Salt and pepper, to taste

Fresh cilantro, chopped, for garnish

Preparation

  1. In a large saucepan or Dutch oven, heat the vegetable oil over medium-high heat. Add the chopped onion and cook for about 5 minutes, or until it is soft and translucent.

  2. Add the minced garlic and ginger to the saucepan and cook for another minute, or until fragrant.

  3. Add the curry powder, cumin, coriander, and cayenne pepper to the saucepan and stir well to combine. Cook for about 30 seconds, or until the spices are fragrant.

  4. Add the coconut milk, diced tomatoes (with their juices), fish sauce, and brown sugar to the saucepan. Stir well to combine and bring the mixture to a simmer.

  5. Add the fish pieces to the saucepan and stir gently to coat them with the curry sauce. Cover the saucepan and simmer for about 10 minutes, or until the fish is cooked through and tender.

  6. Season the fish curry with salt and pepper to taste. Serve the curry hot, garnished with fresh cilantro.
