Beef bourguignon is a classic French dish that originated in the Burgundy region of France. The dish is traditionally made with beef, red wine, bacon, onions, and mushrooms, and slow-cooked until the beef is tender and the flavors have melded together. The dish has become popular worldwide, and is often served as a comforting and hearty meal, perfect for chilly evenings or special occasions. Beef bourguignon is typically prepared in a Dutch oven or other heavy-bottomed pot, and is often served with crusty bread or mashed potatoes. Ingredients

2 pounds beef chuck, cut into 2-inch cubes

6 slices bacon, chopped

2 tablespoons olive oil

2 onions, chopped

4 garlic cloves, minced

2 tablespoons flour

2 cups red wine

2 cups beef broth

2 bay leaves

1 teaspoon thyme

1 pound carrots, peeled and cut into chunks

1 pound mushrooms, quartered

Salt and pepper, to taste

Chopped parsley, for garnish

Preparation

Preheat the oven to 350°F (175°C).


In a large Dutch oven, cook the bacon over medium heat until crispy. Remove with a slotted spoon and set aside.


Add the olive oil to the pot with the bacon fat. Brown the beef in batches, about 5 minutes per batch, then set aside.


Add the onions to the pot and sauté for 5 minutes, or until they start to soften. Add the garlic and sauté for an additional minute.


Sprinkle the flour over the onion and garlic mixture, and stir to combine. Cook for 1-2 minutes, or until the flour has browned slightly.


Add the red wine, beef broth, bay leaves, and thyme to the pot. Bring to a boil, then reduce heat and simmer for 2-3 minutes.


Return the beef and bacon to the pot, along with any accumulated juices. Add the carrots and mushrooms, and season with salt and pepper.


Cover the pot and transfer to the preheated oven. Cook for 2-3 hours, or until the beef is tender and the sauce has thickened.


Remove the bay leaves and discard. Taste and adjust seasoning as necessary.

Garnish with chopped parsley and serve with crusty bread or mashed potatoes.
