Chicken Inasal is a popular grilled chicken dish in the Philippines that is marinated in a combination of calamansi juice (or lemon or lime juice), vinegar, garlic, ginger, lemongrass, brown sugar, annatto powder (or annatto oil), fish sauce, and salt. The chicken is then skewered and grilled until charred in spots and cooked through.
